This Bread is Literally Ba-Nanas

Banana bread is one of my comfort foods. Easy to make and always delicious.

Bananas have been hovering around the $10/kg mark for a while, so baking with them has not been high on my list of things to do. But I saw them for $6/kg today (which admittedly is still quite expensive) yet i suddenly had a craving for banana bread and couldn't not buy some.

Besides, you only need 2 for this recipe anyway, so it didn't quite break the bank.

Ingredients
2 bananas
2 tablespoons golden syrup
¾ cup sugar
1 egg
1 cup self-raising flour
pinch of salt


Heat oven to 180°C


Grease and line the base of a loaf pan (or if yours is boxed up in the garage somewhere and all you can find is a small round tin - that will work too)

In a medium bowl, mash bananas then add golden syrup.

Add sugar and stir in.

Add egg, sifted flour and salt and lightly mix until combined.

Pour into loaf pan/tin and cook for 30 minutes or until a skewer is inserted into the middle comes out clean.

Allow to cool in tin for 10 minutes, then turn onto wire rack to cool.

Enjoy it warm straight from the oven.

  1. YUM! slightly warm/toasted with butter - the best!
    I won't tell you bananas are about 10c/kilo here. I'd bring some back but not sure how i'd go through customs. see you soon beautiful girl x

  2. Thanks Andie - now my peanut butter on toast doesn't look nearly as inviting :P

    It looks delish, and I think the loaf looks rather cute in the round tin :)
